My Tackle It Tuesday revolved around food tonight. Not bad if you ask me :) It was a 3 part TIT...hehe.
1. Cam's Baptism is on Sunday and we are hosting both our families afterward. It's just immediate family including nieces and nephews, but that puts us at 35 people and that's not including Cam and we're actually missing people! I organized the menu and grocery list for that. Luckily, I have some help from my mom and Carl's mom!
2. I had two cartons of blueberries that I needed to use up quickly. Oh shucks ;) A double batch of the Lemony Blueberry Scones I made a few weeks ago were made and put in the freezer. I love having the option of a scone for breakfast with little work!
3. I bought some "value" bananas. Definitely the last time I'll do that unless I need them specifically for bread. We didn't eat them fast enough so they were just taunting me with their "value" brown spots :/ I don't have a need for banana bread right this minute, but figured I could definitely serve some banana nut muffins on Sunday for the Baptism. So, I peeled the bananas and froze them. Now, they will stay perfectly extra ripe and wait for me until Saturday when I make the muffins.

Lemon Cake with Strawberry Filling

You got me to start a simple list on Sunday of things I needed to get done around my house.I finished the office closet purged and reorganized(my main storage closet).Tonight the fridge.I will also use that time to multi-task. so while cleaning the fridge I will go ahead and disinfect cabinets and make a list of needed items in the kitchen food or otherwise.Thanks for the boost!!
